Flounder
fishing at Sebastian Inlet is best
in the mid-winter months. The flounder to the left was caught
on a mild January afternoon. I like to eat stuffed flounder
with crab meat and breadcrumbs. It's real delicate meat so
I don't ever grill flounder, I bake, broil or pan fry with
healthier olive oil.

Redfish are a great fighting
fish that are dependable almost all year around. East Central
Florida host some of the largest inshore redfish in the world
and can be caught on artificials and live bait. I love to
grill and of course blacken redfish the cajun way.
Spotted
Sea Trout are fun topwater action during most warmer
times of the year and can often be caught in the dead of winter
in deep water holes.
The Sea Trout on the left were caught while wading the shallow
water lagoons in East Central Florida. Trout fishing can awesome
action and a great way to get a tan.
Trout have delicate flesh and is not to be cooked on the
grill because it WILL fall through the slats. However if you
shallow pan fry in olive oil with your favorite seasonings
it's a wonderful dish. I like mine with salt/pepper and lemon
(simple but yummy).

Fishing in the Ocean is a spiritual experience. You will
often see so many things that God has made from sea turtles
to sharks. Port Canaveral has some great kingfish, cobia and
tripletail fishing. During some seasons, Mahi-mahi, sailfish,
grouper and snapper are often caught in the deep blue waters
offshore. |
